CHICKEN PIE
Pastry for a double – crust pie
1 and 1/2 cups cooked, diced chicken
1 small onion, chopped
4 tsp butter
2 slices of bacon, diced
3 tbsp flour
3/4 cup chicken broth
3/4 cup milk
1/4 tsp salt
1/8 tsp pepper
1/8 tsp thyme
1/4 tsp sage
1/3 cup mushrooms, sliced
1/3 cup peas
Line the bottom of a casserole dish or deep pie dish with the pastry arrange the cooked chicken inside. Sauté the onion in the butter until yellow. Add the diced bacon and fry until lightly browned. Remove the onion and bacon and sprinkle over the chicken.
To the remaining fat in the pan, stir in the flour, cook for 1 minute. Stirring constantly. Add the broth and milk and cook until thickened. Add the seasonings and pour the sauce over the chicken. Sprinkle the mushrooms and peas over top. Rollout the top pastry and place over the chicken mixture. Cut two or three air vents for the steams to escape.
Bake at 375 F for 50-60minutes, until pastry is lightly browned and bubbling inside.
